Two years ago we refinished (for the second time)the interior of our 1975 yawl. We both times we used polyurethane varnish, the first time satin, and the last time we used Parks Pro Finisher Oil Modified gloss polyurethane which is a tough floor finish. We washed all the wood with TSP substitute prior to lightly sanding. The TSP does a great job of cleaning the wood and removing grime and dirt. We gave all woodwork 2 coats using foam brushes. We removed all wood that could be unscrewed from the boat (it's a lot) and refinished those pieces indoors, which made for easier varnishing and a much better job.
